Michelin-starred dining by the sea
In this Michelin-starred restaurant on the Côte d'Azur, Chef Alexandre Baule creates an exceptional cuisine that is polished yet always inventive, elevating fish, seafood, and meats from the hinterland. Every ingredient finds its rightful place. A surprising culinary journey guided by both the 'moment' and our Chef's curiosity.
Open from May 14th to September 28th, 2025, Wednesday to Sunday, 7.15pm to 9.15pm Booking is compulsory. It does not give access to the swimming pools. A stay booked at the hotel does not guarantee a place at the Michelin-starred restaurant.

ESTELO
A Mediterranean-style terrace
With breathtaking views from its terrace suspended above the waves, the relaxed pleasures of Provençal and Mediterranean cuisine unfold at Estelo, our new restaurant at Les Roches Rouges. Fish arrives straight from the market, and generous dishes come to life for lunch and dinner under the direction of our Chef.
Freshness and conviviality characterise the deliciously colourful dishes of our new restaurant on the Côte d'Azur. The welcoming cocktail bar offers a menu inspired by local flavours—to be enjoyed facing the sea or in the restaurant's cosy nooks. Our restaurant embodies the spirit of the South.
Open from May 7th to October 12th, from 8am to 10.30am for breakfast; for lunch from 12pm to 2.30pm; and dinner from 7pm to 9.30pm. A restaurant reservation does not give access to the swimming pools.
